Dr Norm Marriott

Food Science Department, Virginia Polytechnic Institute and State University

Dr Marriott was born and reared on a livestock and grain farm in Missouri. He has a B.S. and M.S. degree from the University of Missouri and a Ph.D. degree from Texas A&M University. His industry experience includes four years in the meat industry and five years with Safeway Stores with the responsibility of their fresh meat plants. For 25 years Dr. Marriott has been a faculty member in the Food Science Department at Virginia Polytechnic Institute & State University. He has taught numerous courses about meat science and food sanitation and conducted an extensive amount of research related to meat acceptability enhancement. As a professor, Dr. Marriott is the single author of three books, two chapters in two other books, and co-author of two other books. Also, he has authored 108 refereed research papers. Dr. Marriott holds the Professor Emeritus title and is currently writing two other books, teaching two meat science courses, and actively consulting with meat industry firms.
